Magical Granola Molds
2 cups whole Toasted Almonds, unsalted
¾ cup whole Roasted Peanuts, unsalted
¾ cup Toasted Walnuts, chopped
½ cup Rice Krispies
1 tablespoon Flaxseed Meal
½ cup Honey or Magical Honey
⅓ cup Light Corn Syrup
¾ teaspoon Salt
1 teaspoon Vanilla Extract
1 cup Dark Chocolate Chips
1 tablespoon Magical Coconut Oil
In a large bowl, combine almonds, peanuts, walnuts, cereal and flaxseed. Set aside.
In a medium saucepan set to medium-high heat, combine honey, light corn syrup, salt, and vanilla. Stir frequently, until mixture reaches 260°F on a candy thermometer (hard ball stage).
Once done, immediately pour the mix over the dry ingredients and mix with a silicone spatula until everything is moistened.
Scoop the mix into your granola mold or butter mold, then press down to flatten into the grooves.
Place in the fridge to firm up, about 20 minutes.
Melt together the chocolate and oil in a double boiler or in your microwave. Stir until smooth.
Dip and/or drizzle bars with melted chocolate. Refrigerate to let chocolate set.
OPTIONAL: Melt some chocolate into your mold before starting the nut mix, and let it set in the fridge while you work. Once it's set you can scoop the mix right on top of it for an extra chocolatey layer.
